One of the things that always slips my mind when I am about to have a baby, or hit any busy time in life, is what we are going to eat. I am really good at stocking up on the little stuff that get us through lunch and snack times, but I definitely lack in the meal department. It probably has to do with how much I HATE to cook, but that doesn’t really excuse me.
I have posted before about menu planning…and I was doing really, really well for a while….but then between busy, changing schedules and feeling awful through most of this pregnancy I have slipped. Since I have, basically, completed my list of things that need to be done before the baby comes I think my next challenge may be making some meals to freeze.
What this means is that I will probably make double batches of things for the next couple of weeks and freeze half. That’s my goal… There are a few recipes that I rely on heavily throughout the year that I will surely make multiple batches of. I am a Pinterest addict, so I use it as a resource for everything. There is no shortage of crockpot or casserole recipes there and I have chosen a few to test. I love casseroles and crock pot meals, they are easy to put together and let cook while I can move on to other things.

Chili: This recipe is pretty close to mine except that I use pinto and black beans, no kidney beans. It’s delicious, easy and the “hotness” is easy to control.
